Lab-Applesauce/Pectin Lab

Names- Ty + Kate + Scarlet
Hypotheses-Scarlet, Ty, and Kate hypothesize that when we heat the pectin and put it in the applesauce the juice will separate from the applesauce quicker then the unheated pectin. We believe this because our last lab we had applesauce with pectin mixed in together, and then we had plain applesauce. We put the applesauce in to cylinders and tried to tell which apple sauce drained faster. It turned out that the plain applesauce was slower at draining. That made us think, “Would it drain even faster if we heated the pectin?”
Materials- 50 grams of applesauce 11 ML of pectin 2 Graduated cylinders 1 Bunsen burner 2 Strikers 1 Test tube 1 Clamp 1 Ring stand 1 Stopwatch 2 Plastic measuring cups 2 Funnels
2 squares of cheese cloth
Procedures- We took 0.5 ml of normal temperature pectinase and 0.5 ml of heated pectinase and put them into two test tubes. Once we gather the pectinase into the test tubes, we put out two cups and put the applesauce in it. Next we mix the pectinase and applesauce together. We then put a funnel in each graduated cylinder and put cheese cloth on the funnels. Then we put 0.5 ml of boiled pectinase into one of the funnels and 0.5 ml of normal pectinase into the other. Then we observed which funnel drained faster.
Results-
Conclusion-
Our group was very surprised when our hypothesis was wrong. We thought that the heated pectinas would make the apple sauce juice drain faster. The heated pectinase didn’t even come close to the amount of juice the non heated pectinase drained. This experiment made us wonder what would happen it the pectinase was cooled down, would it have to same results as it did when we heated it.
